Rough Rocky Road
Such a great treat for dessert.
I got this recipe working at a burger and wings restaurant. This was the head chefs rocky road recipe that was very popular. Some use coconut but I prefer to leave it out but it’s up to you if you would like to have add it in. Use about half a cup.
Kids will love this and so will adults!
The origins of the rocky road are a little rocky. But one of the stories is that it was first created in Australia in the 1850s. Someone took spoiled confectionary items from Europe and mixed them with nuts and chocolate.
RECIPE
Makes Roughly 800 Grams
Preparation & Cooking Time: Roughly 2 Hours 10 Minutes
320 Grams Milk Cooking Chocolate
180 Grams Dark Cooking Chocolate
100 Grams Small Marshmallows
110 Grams Raspberry Lollies, Halved
100 Grams Peanuts, Halved
INGREDIENTS
Line the base and sides of an 24cm x 24cm square baking tray with baking paper. Half the raspberry lollies and peanuts. Add them to a bowl with the marshmallows.
DIRECTIONS
In a microwave safe bowl, microwave the chocolate 20 second intervals. Stir with a metal spoon each time until melted. Add the chocolate into the bowl with the other ingredients and stir through. Spread the mixture into the prepared baking tray and place in the fridge for 2 hours or until completely set.
Use a sharp knife to cut into slices. If you are having trouble cutting the slice, run your knife under hot water and then dry completely before cutting - the heat will help to cut the slice evenly. Enjoy
